Every year it happens again. It comes without a warning, sneaks up on you and before you know it, it hits you again: another year, also know as “another candle on the cake”. What can you do, you ask? And we found these wise words: “Cake is the answer, whatever the question is.”. Since you know about our other passion, fitness, of course we had to create something fitness friendly, something you might sneak into a gym and your fellow gym buddies would drop the shaker and it’s protein powder to snatch a piece of this deliciousness.
Ingredients - Cheesecake /
12 servings
Cheesecake Filling
500g Cottage Cheese
200g Greek Yoghurt
100 g Egg White
3 Eggs
90g Maple Protein Pancake Mix (alternative 90g flour & 1 1/2 TS baking powder & sweetener of choice)
25g Salted Caramel Sunwarrior Collagen Building (alternative leave this one out)
Pinch of salt
Crumble
200g Cookies
75g Butter (we used a plant based sub Cocovit)
1. Use that gym body, show us why you have been doing all the bicep curls in the first place. Add the cookies in a ziplock bag and with a rolling pin you start smashing the cookies so basically what you have left is cookie crumble. In a bowl mix the cookies and butter. Transfer everything into a springform pan.
2. Time to bring up the heat. Let the oven warm up to 180C. 3. Add all the ingredients of the cheesecake filling in a blender and mix together until everything is smooth like a mf. Pour this mixture on top of the cookie mash. 4. The time has arrived, watch the whole thing rise and shine while it sits in the oven for about 40 minutes. 5. Once you have taken out the beauty, make sure to let it cool down for a moment (yeah right, how would you like it, if somebody started touching you when you just came straight out of a sauna). 6. After about 30 minutes, you can let your creative side take the lead in this whole mix. Time to decorate.

What Agnes has created for the topping is something very simple 100g of Lindt 85% Chocolate & 20g of Peanut Butter, melted in a water bath. Adding a splash of oat milk and mix it until melted. Top the cake with this mix, add the fruits of your choice. Voilá, we got a bomb a** "Every Crossfitter’s Dream Birthday Cake".
This recipe is best served with a side of good friends, loads of good old stories about the birthday boy and balloons. Life hacks: Never have a birthday without balloons.
