"We're Not In Kansas Anymore" Chilli Bowl

Don't get confused people, we're also not in Texas. Even though it could feel like it after cooking up this latest creation. Once again, you'll find yourself in an unfamiliar situation. We have taken a classic and turned it into our vegan version. Please don't hate us for this. We made sure to turn this dish into a meat lover's version (scroll down to the bottom). Let's hope this recipe will bring back memories of a beautiful vacation spent in Austin, Texas. If you haven't been there yet, we'd love to meet you there!

 

Ingredients - Chilli con Vegan /

6 servings

Chilli vegan style

  • 330g Sweet Potato

  • 210g Carrot

  • 150g Celery

  • 170g Red Onion

  • 25g Green Pepper

  • 1 TBS Olive Oil

  • 1 TS Cinnamon

  • 1 TS Chilli Powder

  • 1 TSP Cumin

  • 320g Fried Tomato Sauce

  • 1 Can of Red Kidney Beans (415g)

  • 1 Can of Corn

Side of

  • All your favorite TexMex stuff, like guac, lime, Valentina or any other hot sauce.

  • For our American crowd out there, let's stay classy with some Doritos.

 

1. Heat up the olive oil in a pot on medium heat, add the onion, which you have chopped up roughly. Add the sweet potato and carrots, which you also have diced up previously. Those are the veggies that will take the longest to cook.

2. Chop the celery and green pepper, which you will add to the mix after approximately 10 minutes.

3. Time to spice it all up. Cinnamon, chilli powder, cumin and salt are added now together with the tomato sauce, kidney beans and corn.

4. Keep boiling on medium heat, and make sure to keep stirring occasionally. Within 30 minutes it should be ready to serve.

As promised this goes out to all those who can't divorce meat (just yet!). Feel free to add all the minced meat you want, we recommend to add some oil in a pan, add some extra onion and throw the minced meat of yours in there. Salt & pepper, and cook it all for about 10 minutes, until the minced meat changes color to a dark brown. Did you know they have "minced" meat imitations out there?

This is the perfect dish to serve for during right before the halftime show on Super Bowl Sunday. Get your friends over (only 6 since the recipe is just for that amount) and serve them some goodness in a bowl. Spicy on 3!
