It's happening... Catto's Kitchen is FINALLY live!
2020 wasn't easy. We learned a lot of lessons, one of them being that the only constant in life is change. So here we are on the first day of 2021 finally lifting the curtain and revealing to the world, Catto's Kitchen. We have discussed for a long time which of our favorite dishes should deserve the first post and pretty soon we agreed, it has to be the one thing you can make for breakfast, brunch, lunch, dinner or a snack... THE all-time favorite PANCAKE. Let's jump right to it. Ready, Set, Cook!
Ingredients - Sweet Potato Pancake / 1 serving Pancake
250g Sweet Potato
30g MyProtein Pancake Maple Syrup Mix
100g Egg White
1 Large Egg
100ml Non-dairy Milk of choice (we usually use Oat/Coconut or Almond milk)
1 TS Coconut Oil
Sweet version: granola, nut butter, fresh berries
Salty version: leafy greens, smoked salmon, poached egg
Extra protein version: cottage cheese, hemp seeds, pumpkin seeds
1. Steam the Sweet Potato until soft - usually 20 min. 2. Throw all the ingredients together and blend until you get a smooth batter with some sweet potato chunks. 3. Add a dash of coconut oil in a pan, let the oil melt on a medium fire. Add the batter and be patient. Make sure to flip. Leave on the medium fire (important, otherwise the inside won't be cooked), until it get's a crunchy crust. 4. Throw on a plate and add your favorite toppings.
